Easy ways to take this cult classic to the next level!

Ricotta on toast. It’s simple, delicious and can be whipped up in a couple of minutes. But how can you improve on such a quinitessential dish? We are here to show you… Step one is to start using the best ricotta in Queensland – Fresco Ricotta.

1. Ricotta, Walnut, Figs and Honey on Toast

Difficulty: Medium
Time: 30 mins
Serves: 6-8
Perfect for: Snack, Side-dish or on its own
Fresco Products: Fresco Ricotta

Ingredients

Method

  1. Toast your bread so that it is nice and crispy
  2. Spread desired amount of Fresco Fresh Ricotta onto your toast
  3. Cut two figs into thin slices and lay down across the toast
  4. Crumble your toasted walnuts on top of your toast (NB: to toast your walnuts you can put them on a baking tray in the oven for a 5 minutes at 180C*)
  5. Drizzle honey over the top
  6. Done! It is as easy as that.

2. Ricotta, Cherry Tomatoes and Thyme on Toast

Difficulty: Medium
Time: 30 mins
Serves: 6-8
Perfect for: Snack, Side-dish or on its own
Fresco Products: Fresco Ricotta

Ingredients

Method

  1. Toast your bread so that it is nice and crispy
  2. Spread desired amount of Fresco Fresh Ricotta onto your toast
  3. Cut your cherry tomatoes in half and place on the toast
  4. Sprinkle thyme leaves over the top
  5. Season liberally with salt and cracked pepper and a drizzle of olive oil
  6. Ready to go!

3. Ricotta, Avocado and Poached Eggs on Toast

Difficulty: Medium
Time: 30 mins
Serves: 6-8
Perfect for: Snack, Side-dish or on its own
Fresco Products: Fresco Ricotta

Ingredients

Method

  1. Toast your bread so that it is nice and crispy
  2. Spread desired amount of Fresco Fresh Ricotta onto your toast
  3. Season with pepper
  4. Slice your avocado thinly and place on top of the ricotta
  5. Season with salt
  6. Bring a medium sized pot of water to the boil and add two dashes of white vinegar
  7. Crack your egg into a glass for easy pouring
  8. Stir the water into a gentle whirlpool and pour your egg into the centre and cook for 3-4 minutes or until the white has firmed up
  9. Remove with a slotted spoon and place onto paper towel
  10. Repeat for the second egg
  11. Place both onto your toast
  12. Sprinkle a pinch of paprika and pepper on top of your eggs
  13. Done! You’ve made an epic breakky!
