Fresco Cheese

Mozzarella and Chicken Casserole

Serves: 4

2 teaspoons of olive oil
½ cup onion, chopped
1 clove garlic, crushed
1 ½ medium red capsicum, diced
1 cup corn
1 cup chicken stock, low salt
1 ½ teaspoons thyme, dried
¼ teaspoon pepper, freshly ground
2 cups brown rice, cooked
¼ cup Fresco Mascarpone
2 tablespoons Dijon mustard
¼ cup parsley, chopped
250g chicken, skinless diced and cooked
100g Fresco Mozzarella

15 minutes prep time
45 minutes cook time

  1. Preheat oven to 220oC. Spray casserole dish with olive oil.
  2. Warm oil in a frying pan, over a medium heat. Cook onion until soft. Add garlic and cook for a further minute.
  3. Add capsicum, corn, ¼ of stock, thyme, pepper and cook until capsicum begins to soften.
  4. Add remaining stock, brown rice, mascarpone, mustard and chicken. Remove from heat and stir until combined.
  5. Stir in 1/3 Fresco Mozzarella and parsley.
  6. Transfer mixture to casserole dish and spread evenly. Sprinkle remaining Fresco Mozzarella and bake for 20-25 minutes.
