Fresco Cheese

Marinated Bocconcini Pasta

Serves: 4

220g Fresco Marinated Bocconcini, halved
4 tomatoes, chopped
2 garlic cloves, minced
1 red onion, chopped
1 yellow capsicum, finely chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
400g bowtie pasta
3 tablespoons fresh basil, minced
salt and pepper to taste

10 minutes preparation time
Cooking time as per pasta instructions

  1. Prepare pasta according to packet instructions. Drain pasta and retain 1 cup of cooking water.
  2. Combine and toss vegetables, oil, vinegar, and pasta water.
  3. Stir in Fresco Marinated Bocconcini to pasta mix.
  4. Top with fresh basil and serve warm.
