Haloumi Salad with Butternut Pumpkin

Serves: 4

180g Fresco Haloumi, drained and cubed
1 butternut pumpkin, cubed
10ml olive oil
salt and pepper
½ cup couscous
½ cup green beans, halved
2 tablespoons of pine nuts
salad dressing of your choice

10 minutes prep time
30 minutes cook time

  1. Preheat the oven to 200oC
  2. Place the pumpkin and 5ml of olive oil into a plastic bag and shake until pumpkin is covered. Roast pumpkin until soft.
  3. Fry the Fresco Haloumi in shallow pan until golden brown. Cook the pine nuts in same pan for 2 minutes.
  4. Microwave beans for 1 minute and prepare couscous as per packet instructions.
  5. When the haloumi, couscous, pumpkin and beans have cooled, combine with your choice of salad dressing and serve.
