Fresco Cheese

Bocconcini and Tomato Salad

Serves: 4

1 cup cherry tomatoes, halved
1 cup Fresco Bocconcini, drained and halved
(or) Tuscan Bocconcini, halved
4 cups baby spinach
2 tablespoons fresh basil, chopped
salt and pepper
2 tablespoons of olive oil

5 minutes prep time

  1. Combine baby spinach, cherry tomatoes and Fresco Bocconcini or Fresco Tuscan Bocconcini.
  2. Divide on to four salad plates and sprinkle fresh basil, pepper and salt to taste.
  3. If using Fresco Bocconcini, drizzle oil over salad.
