Ricotta (Italian for re-cooked) is a highly-perishable cheese made from the whey by-product of other cheese productions. Milky white, slightly sweet and crumbly in texture, ours is a flat sided round, wrapped and stored in vacuum sealed bags to keep it fresh. Great in lasagna, calzone, ravioli and curry, as a thickener for tuna or egg salad, and perfect for desserts like cheesecakes and cannoli.
