The baking process and additional salt give this a firm but slightly granulated texture, smoky-savoury in flavour, with baked brown, textured rind and cream-coloured, flavoursome inner. Ours are sealed in vacuum bags and are great as a table cheese, perfect for combining with wines.

Bocconcini
Bocconcini (Italian for small mouthfuls) are a style of mozzarella. Semi-soft, white and rindless fresh mild cheese in ball-like shapes, ours are stored in fresh water, come in a variety of sizes (Pearl, Cherry, Original, Fior Di Latte), have a spongy texture and readily absorb flavour. They are great on salads, pizzas and pasta, sliced or whole.

As a further option we have a Tuscan variety available, marinated in a delicious blend of spices and oil.

Ours is an Australian made Greek style, stored in brine and available in blocks, small cubes and even crumbled. Great as a table cheese, in baked goods such as pies and pastries, and perfect in salads, it can take the place of many other cheeses.

Haloumi is an unripened brine cheese from the Mediterranean island of Cyprus. Ours is stored in brine and lined with flavoursome mint, with a semi hard, smooth and chewy texture, and a creamy yellow colouring. It is perfect when grilled as steaks, fried or even deep fried in cubes, and makes a wonderful addition to salads, barbecues and breakfast dishes.

Milky white, slightly sweet and crumbly in texture, ours is a flat sided round, wrapped and stored in vacuum sealed bags to keep it fresh. Great in lasagna, calzone, ravioli and curry, as a thickener for tuna or egg salad, and perfect for desserts like cheesecakes and cannoli.
